    Danish pastry traditions flourished in the middle of the 19th century when the well-to-do spent their days enjoying extravagant cakes in the pastry shops of Copenhagen. The tradition lives on today and classic cakes such Sarah Bernard, fragilité and potato cake are all Danish creations.
